Sweet and Spicy Mole

Sweet and Spicy Mole is an amazing meal for any time of the year. Mole is a popular dish in the fall season, thanks to Mexican Independence Day (Sept 16) and Dia de Los Muertos. (Nov 1-2)

But what is mole? The first time I had mole it was described to me as “sweet and spicy chocolate chicken.” With that introduction, I was in love, and you can have that same love too!

The recipe is a little long but it is SO worth it! Hang in there and see this one through to the end. You will be happy you did!

Ingredients

Vegetables

2 Yellow sweet onion (1 cut into large chunks, 1 coarsely chopped)
Olive Oil (we recommend ELEVOO)
3 large cloves of garlic smashed and coarsely chopped

Spices

1 tsp oregano
½ tsp ground cumin
½ tsp ground allspice
¼ tsp ground coriander
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp fennel seeds
3 star anise pods
2 cinnamon stick

other

2 Tbs crushed peanuts
2 Tbs pepitas
1 6oz can tomato puree
2 6oz cans water
1½ Tbs coarse kosher salt
1 slice day-old bread (broken into pieces)
8 prunes
1 ½ cup chicken stock

¼ cup Extra Spicy Free Range Fudge

¼ cup Original Free Range Fudge

Instructions

  1. Measure out all of your spices before you start cooking.
  2. Heat pan on medium-low to sautee one coarsely chopped yellow onion until transparent.
  3. Add 3 cloves of minced garlic and reduce the heat to medium.
  4. Add in your spices:
    1 tsp oregano
    ½ tsp ground cumin
    ½ tsp ground allspice
    ¼ tsp ground coriander
    ¼ tsp ground nutmeg
    ¼ tsp ground cloves
    ¼ tsp fennel seeds
    3 star anise pods
    2 cinnamon sticks
  5. Stir for 5 minutes until everything becomes fragrant.
  6. 2 Tbs crushed peanuts
    2 Tbs pepitas
    1 6oz can Tomato puree
    2 6oz cans water
    1 ½ Tbs coarse kosher salt
    1 slice day-old bread (broken into pieces)
    8 dried prunes
    1 ½ cup chicken stock
  7. Simmer 20 minutes
  8. Remove the cinnamon sticks
  9. Puree with an immersion blender or in small batches in a conventional blender
    Add:
    ¼ cup Extra Hot Free Range Fudge
    ¼ cup  Original Free Range Fudge

Put it all together! Mix your chicken directly into the sauce OR pour the sauces over top of your chicken.

Traditionally

Mole chicken is served with sesame seeds, rice, and tortillas. To follow tradition we also like to add to beans, queso fresco, and pickled onions.
