Sweet and Spicy Mole Recipe

Sweet and Spicy Mole

Sweet and Spicy Mole is an amazing meal for any time of the year. Mole is a popular dish in the fall season, thanks to Mexican Independence Day and Dia de los Muertos.

But what is mole? The first time I had mole it was described to me as “sweet and spicy chocolate chicken.” With that introduction I was in love, and you can have that same love too!

The recipe is a little long but it is SO worth it! Hang in there and see this one through to the end. You will be happy you did!

Ingredients

Pickled Onions

1 red onion
¼ cup apple cider vinegar
1 Tbs sugar
1 tsp kosher salt

Mole Chicken Prep

24 oz of pre-cooked chicken (shredded)
2 tsp ground ancho chili peppers
Zest of ½ orange
Juice of 1 orange

Mole Sauce

2 Yellow sweet onion (1 cut into large chunks, 1 coarsely chopped)
Extra Virgin Olive Oil
3 large cloves of garlic smashed and coarsely chopped

1 tsp oregano
½ tsp ground cumin
½ tsp ground allspice
¼ tsp ground coriander
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp fennel seeds
3 star anise pods
2 cinnamon sticks

2 Tbs crushed peanuts
2 Tbs pepitas
1 6oz can tomato puree
2 6oz cans water
1 ½ Tbs coarse kosher salt
1 slice day-old bread (broken into pieces)
8 prunes
1 ½ cup chicken stock

¼ cup Extra Hot Free Range Fudge

¼ cup Original Free Range Fudge

Extra Toppings

    Chop one bunch of cilantro
Slice avocado
Assemble on street taco tortillas

Spicy Hot Fudge Sundae fit for any occasion


Hot Fudge Sundae

Instructions

Prepare pickled red onion

​Slice one red onion (thinly!)
Mix:
¼ cup apple cider vinegar
1 Tbs sugar
1 tsp kosher salt

Add all together and let marinate for one hour

Begin the Sauce

Cut one yellow sweet onion in large chunks and douse liberally in Extra Light Extra Virgin Olive Oil (ELEVOO) and a couple pinches of coarse kosher salt

Place under broiler, and broil until blackened

Get the Chicken Seasoned

Place 2 Tbs ELEVOO in heavy fry pan
Rip apart 24 oz of pre-cooked chicken (ex: roasted from your local market) into around 1” pieces (Approximately 4 drumsticks, 4 wings, 4 thighs)

Salt and Pepper liberally
Sprinkle with 2 tsp ground ancho chili peppers
Place into Medium Hot Fry Pan until browned on all sides – don’t over crowd pan – work in batches if needed.
Add Zest of ½ orange and the juice of 1 orange
Add 1 ½ cup good chicken stock
Bring to boil reduce heat and simmer about 20 minutes.

Continue the Sauce

Add 2 TBS ELEVOO to sauce pot and bring to medium heat – Add the following:
One coarsely chopped yellow sweet onion
3 large cloves of garlic smashed and coarsely chopped
Gently heat until onions are translucent – don’t let garlic burn – Add the following:
1 tsp oregano
½ tsp ground cumin
½ tsp ground allspice
¼ tsp ground coriander
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp fennel seeds
3 star anise pods
2 cinnamon sticks

Stir for 5 minutes until everything becomes fragrant
Add the following:
2 Tbs crushed peanuts
2 Tbs pepitas
1 6oz can Tomato puree
2 6oz cans water
1 ½ Tbs coarse kosher salt
1 slice day-old bread (broken into pieces)
8 dried prunes
1 ½ cup chicken stock

Simmer 20 minutes

Mole Coming Right Up!

Remove cinnamon sticks

Puree with immersion blender or in small batches in conventional blender
Add:
¼ cup Extra Hot Free Range Fudge
¼ cup Original Free Range Fudge

Assemble Free Range Tacos

Putting it All together:
Mix in your chicken in the sauce OR pour the sauces over top of your chicken

Chop one bunch of cilantro
Slice avocado
Assemble on street taco tortillas
